Balsamic Brussels Sprouts

Brussels sprouts are one of those vegetables that people either love or hate, with very few people falling in between. If you’re one of those people who hate them, chances are you may just not have had them cooked properly! If they aren’t seasoned well then they can turn out bitter, and if they aren’t cooked long enough they can be hard and crunchy. These brussels sprouts are full of flavour, crispy on the outside, soft on the inside, super easy to make, and keep well during the week for meal prep!

You will need:

  • Approximately 50 brussels sprouts (enough to fill a medium-size mixing bowl)
  • 2.5 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  • Preheat oven to 425F
  • Wash brussels sprouts, remove stems and any ragged or yellow outer leaves. Cut any large brussels sprouts in half to ensure even cooking
  • In a large mixing bowl, toss the brussels sprouts with olive oil, balsamic vinegar, salt, and pepper
  • Place brussels sprouts on a foil lined baking sheet and cook in oven for approximately 30 minutes, shaking pan halfway
  • Enjoy!
